One of my favorite recipes is for homemade spaghetti carbonara. Here's how to make it:
Ingredients:
1 pound spaghetti6 slices of bacon, diced2 cloves garlic, minced2 eggs1 cup grated Parmesan cheeseSalt and pepperFresh parsley, chopped (for garnish)
Instructions:
Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
In a large skillet, cook the bacon over medium heat until crispy. Add the garlic and sauté for another minute.
In a small bowl, whisk together the eggs and Parmesan cheese. Season with salt and pepper.
Add the cooked spaghetti to the skillet with the bacon and toss to combine. Remove the skillet from the heat and quickly pour in the egg and cheese mixture, stirring vigorously to coat the pasta. If the sauce is too thick, add some of the reserved pasta water a little at a time until desired consistency is reached.
Serve the spaghetti carbonara hot, garnished with chopped parsley.
