Instructions:
In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant.Add the diced carrots and potatoes to the pot, and cook for a few minutes until they start to soften.Stir in the diced tomatoes and vegetable broth, and bring the soup to a boil. Reduce heat to low and let simmer for about 20 minutes, until the vegetables are tender.Add the dried thyme, salt, and pepper to taste, and stir to combine.Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.Serve the garlic soup hot, garnished with fresh parsley. Enjoy!
