Instructions:
Boil the potatoes, carrots, and beets until they are soft. Peel and grate the vegetables separately.
Finely chop the onion and mix it with the grated beets in a separate bowl. Add salt and pepper to taste.
In a large serving dish, layer the ingredients starting with the grated potatoes, then the peas, followed by the beet and onion mixture, and finally the grated carrots.
Spread a layer of mayonnaise on top of the salad, covering all the vegetables evenly.
Continue to layer the vegetables and mayo until you run out of ingredients, finishing with a final layer of mayonnaise.
Cover the salad with plastic wrap and refrigerate for at least 2 hours before serving to allow the flavors to meld together.
Serve the salad cold and enjoy! You can garnish with additional peas or grated vegetables if desired.
