Instructions:
In a large pot, brown the beef stew meat over medium heat until it is cooked through. Remove the meat from the pot and set aside.In the same pot, add the diced onion and carrots and cook until they are softened.Add the potatoes, beet, cabbage, diced tomatoes, beef or vegetable broth, garlic, and bay leaf to the pot. Bring to a boil and then reduce heat to simmer for about 30 minutes, or until the vegetables are tender.Return the beef stew meat to the pot and let it simmer for another 10 minutes to heat through.Season with salt and pepper to taste.Serve hot, garnished with a dollop of sour cream and fresh dill.
